french bread

makes 2 loaves

ingredients

2 1/2 tsp active dry yeast
1/2 cup warm water
1/2 tsp sugar
* mix yeast, sugar and water in a bowl- let stand five minutes

add to the bowl
3 1/2 cups of bread flour (unbleached all purpose flour- Red Mill)
1 cup water
1 1/2 tsp salt
* mix well, knead by hand for five minutes-
place in oiled bowl & turn over once
let it rise covered for two hours

olive oil (i use a spray) for baking sheet
also some cornmeal for baking sheet so bread doesn't stick- works really well!

how to

1. after two hours set dough on floured surface, punch down the bubbles and divide the dough into two; add flour if it's too sticky
2. using the palms of your hand to roll each half into a long rope 10-12 inches
3. grease baking sheet & scatter cornmeal on it
4. place the ropes side by side; cover and let stand up to 1 1/2 hours
5. sprinkle flour on top & blade diagonally for decoration
6. 30 mins before it is done rising preheat the oven to 450 degrees F.
7. bake about 25 minutes or until golden brown
8. let it cool before serving!

note: after i take the bread pan out of the oven i do what my mom has always done. i (carefully since its hot) prop the pan with the bread in it against our tiled wall using two kitchen towels for each end of pan so it divides the hot pan from the wall. then let it sit there until almost completely cooled. then transfer bread out of pan and roll it in paper towels until completely cooled before putting it in a plastic bag to keep it from going bad. then store it wherever you store bread! is this is too confusing just do what works for you!
