chocolate zucchini muffins

don't let the zucchini throw you off! they don't taste like it at all just a easy way to add some veggies. these babies were a big hit before so i made them again.

 
ingredients:
  • 1 flax egg ( 1tbsp ground flax meal plus 3 tbsp of water, or you can mush up 1/2 banana to replace one egg, or 1/4 cup applesauce)
  • 1 1/4 cup zucchini grated
  • 1 1/4 cup almond milk (you can use other vegan milk if you don't have almond)
  • 2 tsp apple cider vinegar
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1/3 cup cocoa powder
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup sugar
  • 1/3 cup chocolate chips (optional)
  • 2/3 cup walnuts (mandatory! unless you really hate crunchy muffins or nuts)
  1. preheat oven to 350 degrees fahrenheit 
  2.  mix flax seed with the water and set aside [or prepare your egg replacer]
  3. grate the zucchini and set aside
  4. mix almond milk and apple cider set aside
  5. in a large bowl mix dry ingredients; flour, cocoa powder, baking powder and baking soda, salt and sugar
  6. mix the wet ingredients; egg replacer almond milk mixture maple syrup, and vanilla extract
  7. pour wet ingredients over dry and stir until combined, fold in optional chocolate chips, walnuts and grated zucchini
  8. pour in muffin pan and bake for 15-17 minutes or until passes toothpick test
