don't let the zucchini throw you off! they don't taste like it at all just a easy way to add some veggies. these babies were a big hit before so i made them again.

- 1 flax egg ( 1tbsp ground flax meal plus 3 tbsp of water, or you can mush up 1/2 banana to replace one egg, or 1/4 cup applesauce)
- 1 1/4 cup zucchini grated
- 1 1/4 cup almond milk (you can use other vegan milk if you don't have almond)
- 2 tsp apple cider vinegar
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 2 cups flour
- 1/3 cup cocoa powder
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup sugar
- 1/3 cup chocolate chips (optional)
- 2/3 cup walnuts (mandatory! unless you really hate crunchy muffins or nuts)
- preheat oven to 350 degrees fahrenheit
- mix flax seed with the water and set aside [or prepare your egg replacer]
- grate the zucchini and set aside
- mix almond milk and apple cider set aside
- in a large bowl mix dry ingredients; flour, cocoa powder, baking powder and baking soda, salt and sugar
- mix the wet ingredients; egg replacer almond milk mixture maple syrup, and vanilla extract
- pour wet ingredients over dry and stir until combined, fold in optional chocolate chips, walnuts and grated zucchini
- pour in muffin pan and bake for 15-17 minutes or until passes toothpick test
