super fun and easy lunch idea for a sandwich alternative that is pretty dang healthy!

- 1 ripe avocado mashed
- few drops olive oil
- salt, pepper
- 1 half lemon juice squeezed
- ezekiel bread 2 slices
- baby greens spinach
- 1/2 carrot grated
- green onion sliced
- 1 brussel sprout cut in slices
- peel avocado and in a small bowl mush it up with a fork (if its right enough it should be very easy, the riper the better) add a few drops of olive oil, lemon juice and the salt & pepper to taste. try the mixture should be tasty and not too much salt!
- prepare all the veggies; grate the carrot, cut the green onion and brussel sprout and wash some spinach leaves
- spread the avocado mixture on the two slices of bread
- put a few spinach leaves one each side of bread slices
- top each side with shredded carrot, green onion and brussel sprout
- enjoy the two slices separately as i did or combine them
i enjoyed this sandwich with some sun on the patio! |
