avocado spread and veggie sandwich

super fun and easy lunch idea for a sandwich alternative that is pretty dang healthy!  
ingredients:
  • 1 ripe avocado mashed 
  • few drops olive oil
  • salt, pepper
  • 1 half lemon juice squeezed
  • ezekiel bread 2 slices
  • baby greens spinach
  • 1/2 carrot grated
  • green onion sliced
  • 1 brussel sprout cut in slices
how to:
  1. peel avocado and in a small bowl mush it up with a fork (if its right enough it should be very easy, the riper the better) add a few drops of olive oil, lemon juice and the salt & pepper to taste. try the mixture should be tasty and not too much salt!
  2. prepare all the veggies; grate the carrot, cut the green onion and brussel sprout and wash some spinach leaves
  3. spread the avocado mixture on the two slices of bread
  4. put a few spinach leaves one each side of bread slices
  5. top each side with shredded carrot, green onion and brussel sprout
  6. enjoy the two slices separately as i did or combine them
*note: you can certainly substitute any of the veggies in for what you have and enjoy on a sandwich/ have at hand but the avocado spread is good alternative to plain butter
i enjoyed this sandwich with some sun on the patio!
