vegan cherry cobbler

i veganized la buona cucina's cobbler recipe for this! :)
*first time making this or any cobbler...everr

ingredients:

filling
1 jar of tader joes morello cherries





crust
1 cup all purpose Red Mill flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
3 tablespoon Earth Butter
1/2 cup soy milk
3/4 cup sugar




 

topping
1 1/2 teaspoons cornstarch
1/2 cup sugar
plus 1 cup water to a boil

how to:

*preheat oven to 350 degrees F.
1. Filling:
butter an 8x8 square pan and add drained cherries, sprinkle the 1/4 cup sugar on top. 



2. Crust :
combine the butter and 3/4 cup sugar until well mixed
add milk and mix, add flour, baking powder, and salt & mix for 1 minute, well combined
dump and spread the mixture over the cherries, it's okay to have uncovered spaces

3. Topping:
sprinkle on corn starch and 1/2 cup sugar
pour boiling water all over
bake for 1 hour or until golden brown




Serving Suggestions:
serve warm with vegan whipped cream & vegan coconut or vanilla ice cream :)
