let me tell you about our 14+ hour road trip to colorado.
the night before we got up at 4 am i was celebrating my best friends 21st! it was a night to remember with coincidentally all of my high school friends.
let's keep this short; i had too much to drink and came home exactly 2 am, slept 2 hours, and welcomed this road trip with open arms plus a headache, stomach ache, and sleep deprivation etc. it was NOT cute as you can imagine. in general, i am so not a long car ride loverr by any means. it was painful.
so worth it though ; )

before we left i spent all day friday packing up the food / making the food! we tried to keep it healthy with lot's of variety.

before we left i spent all day friday packing up the food / making the food! we tried to keep it healthy with lot's of variety.
i made my homemade vegan pizza and pre-sliced as our main food for the road.
- vegan pizza
- granola bars
- sweet peppers from moms garden
- green peppers sliced
- hummus
- bananas
- grapes
- spiced chickpeas baked
- sliced cucumbers from moms garden
- flaxseed crackers
- carob chips
i decided to make my very first homemade granola recipe. it included rolled oats, peanut butter, agave syrup, cranberries, sunflower seeds and pumpkin seeds.
^^^ it was pretty simple to make. in a large bowl mix the ingredients you want and in another bowl mix the wet ingredients: PB, agave syrup and little salt. blend the two and pour into baking sheet. refrigerate for 4 hours!
mine needed more agave for it to stick better since it crumbled a lot later not to mention i really don't think i love granola bars. overall these were still pretty decent, although strong on PB so i couldn't eat a lot at once. this definitely needs a do- over! p.s. if you have a great recipe, send it over!
+++ ON THE ROAD +++
in brief it was a lot of re playing the only three cd's we had: simon and garfunkle - my favorite is of course mrs. robinson, regina spektor - J's favorite, some book on tape and i say some because it was dreadful since all we had that sounded decent was "the silencer" and that got really old fast. J loved it. (so weird) he also loved long periods of no sound, which was great at times but painful at others since i would much rather listen to music. overall we weren't bored one bit -- that's a really good sign.
we stopped a few times to get gas and eat our food in a brisk manner. it was delicious and decided we packed some really good food choices. J also hassled me to drink more water any chance he got. ya know, colorado elevation and stuff. which was sweet but by the end i wanted to throw a punch.
