buckwheat soba noodles stir fry

this recipe was completely made up and turned out wonderful. this was my first time using soba noodles that i completely forgot i had in the pantry. they definitely make this meal ten times better, so it is worth looking for then at the grocery store! also this takes no time at all. this recipe makes enough for two hungry people. for ingredients just use whatever veggies you enjoy and try to get a good variety. i just eyeballed how much veggies i used so use how much you desire.

ingredients:
  • medium sized onion chopped
  • large clove of garlic
  • shredded carrots handful
  • peas
  • broccoli
  • mushrooms sliced
  • 2-3 tbsp of olive oil/ anything you have
  • 1/4 cup soy sauce
  • tablespoon sugar
  • tablespoon lime juice/lemon
  • 2 tsp ginger (i used powder, raw is good too)
  • salt to taste
  • buckwheat soba noodles 
how to:
  1. follow package directions for cooking noodles. i used half the package for two people
  2. heat oil in stir fry pan and add onions with garlic
  3. cook until onions are translucent, stir occasionally
  4. add broccoli, peas, and carrots cook until tender
  5. stir in the ginger and add some salt
  6. add mushrooms last and cook until tender
  7. combine soy sauce, sugar and lemon juice in a bowl
  8. once the veggies are almost done add in the sauce and stir for another 2-3mins
  9. check salt/taste 
  10. remove from heat and plate with soba noodles
