walnut banana bread

this recipe is perfect for when you have really old bananas you don't know what to do with. not to mention a nice healthy snack you can have for the week :)



ingredients:
  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp all spice (or some nutmeg and some cinnamon)
  • 1/2 cup margarine (earth balance)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 3 ripe bananas
  • 1/4 cup non dairy milk 
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
how to:
  1. combine non dairy milk with apple cider vinegar in a small bowl and set aside
  2. pre heat oven to 350 degrees F, grease bread pan
  3. combine flour, baking soda, salt, and spices in a large mixing bowl
  4. in another bowl- cream with mixer white and brown sugar with margarine 
  5. then add mushed bananas, vanilla extract, and the milk-sugar vinegar to your bowl in step 4 and continue to mix with mixer for few minutes until smooth
  6. add the wet ingredients to the flour mixture and stir to mix very well, then stir in your nuts
  7. pour batter into bread pan
  8. bake 60-70 mins or until it passes the toothpick poke test
  9. remove and let cool 15 minutes or until completely cooled before slicing
