ohhh these were fun to make and eat! their blueness reminds me of something straight out of willy wonka.
ingredients:
- 1 cup flour
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 3/4 cup of soy milk/ or almond milk
- 1/4 cup of applesauce
- 1/2 cup of frozen berries or fresh
how to:
- put all the dry ingredients in one bowl and mix well
- put all the wet ingredients in a separate bowl; applesauce, soy milk and berries
- add small increments of dry ingredients into the wet and mix well to get rid of any lumps
- heat your pan and drop some vegan margarine or non stick spray; pour some batter and leave each side of the pancake on for about a minute or until the edges are golden brown
- of course i serve with some lemon wedges and agave syrup
