i have about three recipes for masala and i've made it enough times that i just make it up as i go and put in what i feel like from the three recipes. this is a very easy dinner recipe idea and takes no time at all. feel free to change it to your liking depending on how much you want to make or what you like.

note: i make it different every time so first two pictures are not the third. i like to eat with sauteed mushrooms (my moms style) and asparagus.
ingredients:
- 1 medium onion chopped
- 2 tbsp veg oil
- 2 cloves garlic minced
- 2 tsps ginger
- 1 15oz diced tomatoes and juice
- 1 15oz can garbanzo beans
- juice of 1/2 lemon
- 1/2 cup to 1 cup water
- 1 tbsp ground coriander
- 2 tsps ground cumin
- 1 tsp turmeric
- (you can also use paprika or cayenne pepper, any spice you like really)
- saute onion, garlic, ginger in vegetable oil over medium heat for 5 min until onion translucent
- turn heat to medium-low and add spices- cook for 1 min
- add diced tomatoes, water, garbanzo beans and stir to combine
- simmer uncovered for 10 minutes or until beans are soft
- add in lemon and salt to taste
